Ratatouille seal of approval ^_^

Ratatouille!!


1 eggplant
1 14.5 oz diced tomatoes
1 zucchini, sliced
1 onion, chopped
4 cloves garlic, chopped
3 T olive oil
1 bay leaf
1 t oregano, marjoram
1/2 t rosemary
1 bell peppers, cut into strips
3/4 cup Parmesan & Romano, grated
salt and pepper
cayenne pepper
1 1/2 t cumin

-chop eggplant into slices, salt, and press slices between two plates with a weight.
Saute onion, garlic, bay leaf
- rinse and squeeze water out of eggplant, cut into chunks, and saute with onions and garlic (add spices, herb) until soft.
-add zuc, peppers, tomatoes and two cups of water
-simmer for 10 min until peppers and zuc are tender
top with parsley and olives.

My roommate Vincent approves of the particular recipe!! This is what I found on the refrigerator the next morning.
