Hi everyone!

Hope you are well. Here in Sweden it is getting colder and the leaves are turning red. I think I'm having a small cold going on but exept that everything is good.

The apples are delicious here now and it is not impossible to find different kinds of Swedish apples in the stores now :) I have a cake I like to make if I have apples that are a bit too sour to eat as they are (of course you can take any apples).


Fyri's cake (Apple Sponge Cake)
125g stick margarine or butter
2/3 cup sugar
2 eggs
1 cup all-purpose flour
½ teaspoon baking powder
2 tablespoons milk

3-4 medium apples
1-2 tablespoons sugar
1 teaspoon cinnamon

Oven temp: 175 C/350 F
Grease and flour a 24cm (10 inch) springformpan.
Melt the butter and let it cool. Beat the sugar into the butter. Add the eggs, one at a time, beating well after each. Combine the dry ingredients and add alternately with the milk. Pour into the prepared pan.
Peel the apples, if desired, and cut into thin wedges. Puch the wedges into the batter in a pinwheel pattern. Sprinkle with sugar and cinnamon (or another spice like cardamom, brown sugar works well too, try what you have at home!). Bake on a low oven rack for around 30-40 minutes. Serve with whipped cream or ice cream.
